Beef Tallow Fries

Fries the way they used to make them

Fast-food fries went to vegetable oil a long time ago. Ours never did. We cut potatoes by hand every morning and fry them in 100% beef tallow, in a fryer where nothing breaded ever goes, at both of our kitchens.

Hand-Cut Fries Whole potatoes cut in the kitchen every morning, dropped in beef tallow and salted while they are still crackling.

Loaded Cheese Fries The same tallow fries, buried in cheese. On the Rockwall menu.

Flash-Fried Brussels Halved sprouts straight into the tallow, so the edges go crisp and the centers stay sweet. On the Rockwall menu; get them loaded if you are hungry.

Beef tallow fries, answered

What do you fry your fries in?

100% beef tallow. Both kitchens run a dedicated fryer that holds nothing but tallow, and nothing breaded ever goes in it.

Are the beef tallow fries gluten free?

Yes. That fryer is our dedicated gluten-free fryer, so the fries and the Brussels never share oil with anything breaded. Ask our team about preparation; we are happy to walk you through it.

I avoid seed oils. What should I order?

The fries and the flash-fried Brussels are the easy call: there is no seed oil in that fryer, only beef tallow. Put them next to a burger on a keto bun or no bun at all, and ask the counter about anything else on the board.

Are the fries hand-cut?

Every morning, in the kitchen, from whole potatoes.

Where can I get them?

Hand-cut fries are on the menu at both locations: Wells Cattle Co. on Fannin Street in downtown Rockwall, and Wells Burgers Express on I-30 in Royse City. The loaded fries and the Brussels are on the Rockwall menu.
